 Tips

  • Stores well in an airtight tin for up to a week and can be enjoyed by all the family.
  • Serve with Strawberry smoothie for a healthy balanced breakfast or snack.

Ingredients

  • 50g oats (or you can use gluten free oats, buckwheat flakes, amaranth flakes, quinoa flakes or millet flakes)
  • 100g dried apricots, finely chopped
  • 150g pitted dates, finely chopped
  • 1 rounded teaspoon peanut or almond butter (optional)

Method

  1. Preheat oven to 180°C/fan 160°C/Gas 4.
  2. Put all the ingredients into a bowl and mix well, then blend together using clean hands until it forms a paste and all the ingredients are evenly mixed.
  3. Press the mixture evenly onto baking tray lined with baking paper to make a 13–14cm square.
  4. Cook the bars for 12–15 minutes until golden.
  5. Remove from the oven and cut into six one way and two the other to make 12 bars.
  6. Leave to cool and serve.
