Roast chickpeas and almonds with smoked paprika

A quick and tasty alternative to just plain nuts, these are delicious served straight from the oven. They can be pretty firm on the teeth, so be careful as you crunch.

Ingredients

  • 400g tin of chickpeas, drained and rinsed
  • Leaves from 2 sprigs of fresh rosemary (about 1tsp), finely chopped
  • 2tsp ground cumin
  • 1tsp smoked paprika
  • 100g whole almonds
  • Freshly ground black pepper

Method

  1. Preheat the oven to 200°C (fan 180°C), gas mark 6.
  2. Toss the chickpeas, rosemary, cumin, paprika and black pepper together on a large baking tray. Spread them out in an even layer and bake for 15 minutes until just beginning to crisp up.
  3. Then scatter in the almonds and give everything a good toss together. Return to the oven for another 10 minutes until the chickpeas are crisp and are starting to colour.
  4. Remove from the oven, pour into a bowl, allow to cool a little more and then serve.

This savoury snack makes for a healthier and more flavourful alternative to crisps.
